The Genoese Cima
Genoese cima, or simply cima (in Ligurian a çimma), is an iconic second course in the Ligurian tradition. Originating as a poor recipe, it was prepared with recycled ingredients and transformed into a tasty and nutritious dish thanks to the patience and skill of housewives.
Its preparation is long and intricate: starting with a cut of veal, carved to form a pocket to be stuffed with a rich filling. The piece is then sewn by hand to seal the contents and cooked slowly in broth. Once ready, the cima must be left to rest under a weight so that it can be sliced to perfection.
Fundamental to the authentic aroma and flavour is the pèrsa, or marjoram. This dish is so deeply rooted in Genoese culture that the singer-songwriter Fabrizio De André dedicated a song to it in dialect, entitled precisely  çímma.
