Zeppole di San Giuseppe
The tradition of Zeppole di San Giuseppe in Eastern Liguria has its roots in La Spezia, where Saint Joseph is the patron saint of the city. Every year, on 19 March, during Father’s Day, one of the region’s most important national fairs takes place along the seafront, bringing together hundreds of exhibitors over three days. The Zeppola is an unmistakable part of the celebration, alongside the famous porchetta sandwich.
Over the years, however, this traditional dessert has moved beyond its strictly seasonal origins and is now readily available throughout the year at the area’s best pastry shops.
The traditional recipe calls for sweet dough shaped into a ring and fried in extra virgin olive oil, then filled in the centre with pastry cream and topped with one or more sour cherries in syrup. A light dusting of icing sugar completes both its appearance and sweetness.
There is also a lighter version, in which the dough is baked in the oven rather than fried. In both interpretations, the Zeppola has firmly established itself as part of the dessert tradition of La Spezia and much of the Val di Magra, becoming an essential presence on festive occasions.
Because, after all, it is hard to imagine a celebration without the rich, unmistakable flavour of a Zeppola di San Giuseppe.
