The Testaroli recipe
Lunigiana testaroli are among the oldest dishes in the local culinary tradition. Created to make the most of just a few simple ingredients, they are cooked in the traditional testo and then briefly dipped in boiling water, a technique that makes them soft, filling, and comforting. Traditionally, they are enjoyed with olive oil and Parmesan, with a light pesto, or with a mushroom sauce.
INGREDIENTS
- 600 g flour;
- 500 ml water;
- Salt, to taste.
METHOD
In a large bowl, prepare a fairly thin batter by mixing the water, flour, and salt until smooth and free of lumps.
Meanwhile, heat the base of the testo thoroughly. Pour in enough batter to evenly cover the bottom, creating a layer about half a centimeter thick. Cover with the lid and cook for about eight minutes.
Once cooked, remove the flatbread and let it cool. When completely cool, cut it into squares about 4–5 cm wide.
Bring a pot of salted water to a boil and immerse the testaroli for a few minutes, just long enough for them to soften and slightly increase in volume. Drain gently and season as desired: with pesto, mushroom sauce, or simply with extra virgin olive oil and grated Parmesan.
