Gastronomia Bardini, just a few steps away from the historic centre, offers you all the specialities of the ancient local cuisine: tortelli, cakes, stuffed bacon, vegetable stuffings, testaroli, lasagne bastarde and many other traditional Lunigiana’s dishes.
Among the many products you have to try there are the aforementioned tortelli pontremolesi. Vegetable tortelli are a typical recipe of Pontremoli; they are served with meat sauce, oil and cheese or a good mushroom sauce. The alternative are the tortelli di ricotta, a dish coming from the nearby Ligurian tradition. During the right season, the lasagne bastarde are also not to be missed. They are thin squares sheets of dough, obtained by mixing white flour with chestnut flour and milk. They are served with ricotta and Parmesan cheese or with a sauce of sausages and leeks. Other mandatory dishes are the stuffed bacon, the vegetable stuffings, the rice bomb and the cakes. Among the cakes, the torta d’erbi (“herbs pie”) is the queen and, not coincidentally, it is the most popular and requested one together with the potato and leek cake, with its peculiar and typical taste.
