Gourmet
Meaning: Gourmet, Connoisseur.
Etymology: From French, originating from the Old French groume meaning “wine taster, attendant to a wine merchant,” combined with Middle French gourmand meaning “glutton.”

“Gourmet” as we see it
Around the word Gourmet, a vast literature has flourished over time, tracing the evolution of its meaning. Through both proper usage and misappropriation, it has come to be associated— in its lexical integrity—both with haute cuisine and with people or foods of refined taste.
A misleading tendency, however, often equates the buongustaio (the French-derived “gourmet”) with sophistication, referring to a discerning palate capable of appreciating intricate flavor combinations.
And what does the word Gourmet mean to us?
For us, it represents the richness of a typical, genuine cuisine—simple in its essence yet masterfully enhancing flavors and aromas—that has embraced the challenges of time while refining its very essence. It is a source of pride for the gastronomy of our region and a harmonious expression of the Mediterranean diet.
It is a cuisine that has always respected the rhythm of the seasons, nurtured by a land kissed by the sun and caressed by the sea, cradle of extraordinary biodiversity. Once considered “poor,” as it was painstakingly cultivated by heroic hands, it has been transformed by culinary art and passion into pleasurable delicacies, delightful to see and savor, often original if not unique—even amid fortunate, joyful fusions.
Our land is ruled by basil, rosemary, lemons, olives, and vines, by chestnut and acacia for honey. Our seas yield mussels, oysters, and blue fish.
It is the land of pesto and the sea of anchovies.
This is how gastronomy becomes refined while remaining authentic: it becomes Gourmet through the recipes of its tradition, increasingly attractive to a new form of tourism—experiential tourism—which encourages a deep understanding of the places visited, not just to traverse them, but to explore, live, and share their richness and variety.
The recent emergence of healthy and necessary competition between regions has also fostered a new, stimulating creativity, contributing to the rich mosaic of biodiversity that must be promoted for its uniqueness.
It is this uniqueness that we wish to share with you more thoroughly through our Signature Products. Among them, in intentionally varied order, are farinata, anchovies, the soup called mesciüa, stuffed mussels, seafood cruditès, as well as panigacci, focaccia, pizza, and gelato, together with first and second courses based on fish, not forgetting pesto and every other condiment this land offers. It is no coincidence that the Italian Oyster Fest, Italy’s first national oyster festival, is held here.
These are all flavors and aromas to discover, taste, and enjoy amid a landscape that is truly unique, offering small capsules of culture, history, and art, themselves also unique.
